Favorites: Steve Haas’s shiitake mushrooms

You can find some of the most beautifully appetizing mushrooms in the area without having to set foot into the woods. If you visit the table of Steve Haas Mushrooms at the South of the James market, you can choose from a variety of his cultivated and wild harvested fungi. His shiitake mushrooms ($15/lb.) add a meaty, earthy flavor that’s perfect for a winter risotto, and they make a fine side dish on their own sautéed in butter.
