Broth, noodles, sliced beef, and green onions might sound like simple beef soup. But good phở relies heavily on rich, complex broth that takes hours to prepare from beef bones and a variety of spices. Pho So 1 in Richmond’s West End serves up delicious bowls of the stuff, like the phở tai, nam (#11 on the menu, $6.75). This version includes thin slices of beef that cook all the way through from the heat of the broth. Add some sprouts or Thai basil from the garnish plate and maybe some chili paste if you’re adventurous.
