I walked over to the Compleat Gourmet (Belmont and Cary) to buy me a small kitchen utensil and I noticed their cooking class schedule was posted. I guess I had always known they had classes, but it occurred to me that the readers of this site might be interested in checking one of them out. Fun with Food
Whether it’s the preparation or the presentation, Victor has a sure-fire way to wow your dinner guests. He begins this class with chopped shrimp, chicken and spring vegetables presented in a martini glass and served with lettuce cups or phyllo tarts. Next, he moves to steamed black mussels served in a roasted jalapeno and rosemary broth, and grilled salmon served with drunken spaghetti noodles. His salad course consists of grilled shrimp and apples tossed with lemon zest and goat cheese.

Heart Healthy Desserts
Just when you thought you could never eat sweets again, Jannequin comes to the rescue. In this class, she presents some decadent chocolate desserts made without refined carbohydrates, sugars, dairy products or unhealthy fats. Come to this class and sample guilt-free chocolate pecan torte, chocolate cherry truffles, and chocolate lava cake.

Cooking Simple
Sample Charles’ new cookbook by watching the author prepare his own recipes. In this class, he puts together a menu of fried oysters, roasted red pepper soup, peanut-crusted rockfish, and leg of lamb with roasted garlic sauce. Each student receives an autographed copy of Cooking Simple to take home.
