Favorites: Saison’s porkchop

I’m happy to see a developing expectation for many of Richmond’s new dining spots to include top-notch bar programs. Saison is no exception, but to our benefit, they serve food alongside their beers and cocktails. The cuisine blends the comforting flavors of Latin America and the American South, resulting in dishes like the al pastor pork chop ($18). Sitting atop a healthy portion of blue-corn grits and broccoli rabe is the juiciest pork chop I’ve ever eaten, brined with piloncillo–a paste derived from unrefined, crushed sugar cane. It’ll fill you up, but save room for a beer.
