Walker started Chocolates By Kelly in 2009. Before then she had been making chocolate on a part-time basis, selling it wholesale.
“I converted the back bedroom of my house into a kitchen,” she said. “My first customer was The Wine Cellar in Midlothian.”
In 2007, when she was making chocolates part time, she was using almost 200 pounds of chocolate in a year. By 2010, she was up to 2,000 pounds, and now she goes through 5,000 pounds in a year.
