Q&A with Metzger Bar and Butchery’s Brittanny Anderson

Anderson discusses her favorite menu item, running a butchery and why she chose Church Hill.

Metzger Bar and Butchery is a new, German-themed restaurant opening this Spring in Church Hill. EastEndDaily.com spoke with Brittanny Anderson, the chef and co-owner, about her new culinary endeavor.

 

Q: Why did you choose the East End, specifically Church Hill, to open Metzger Bar and Butchery?

A: We live and work in Church Hill and we love this neighborhood. It only made sense to open our business here as well. Church Hill is special not only for its beauty but also its diversity, and we wanted to contribute to the neighborhood’s growth and continued development.

Q: People seem excited about the prospect of a honest-to-goodness butcher in their neighborhood. Is this an aspect of the restaurant everyone involved was intent on including?

A: Our idea developed over time, but with all of the butchery experience shared by our owners it seemed like a no brainer to bring this service to our neighborhood. We are really excited to bring high quality, natural, and local meats to the area.

 

Q: How do you plan the incorporate the tastes, flavors and ingredients of German cuisine with the Southern cooking so many in the River City are familiar with?

A: We are focusing on doing a few traditional German staples really well, like schnitzel, Weisswurst, pretzels, and pumpernickel. We also will be using lots of traditional German ingredients in a bit more modern way, taking things like quark, or krauts and doing non-traditional applications. We won’t have a particularly Southern bent to anything, but the flavors should be really familiar and comforting to most everybody in the River City!

 

Q: What is your favorite item on the menu? 

A: It changes as we keep developing it, but right now I’m pretty excited about our Bock-brined pork chop at dinner and the traditional German breakfast boards we are planning on doing at brunch.

 

Q: Church Hill is becoming the go-to location for high-quality good eats. Do you see Metzger Bar and Butchery as further proof of this culinary evolution?

A: I sure hope so! Church Hill is special because our restaurant community is so tight and supportive and it has become an inspiring place to be for a chef, or anyone who is interested in great food. We are thrilled to be surrounded by so many talented chefs and restaurateurs.
