Nanny’s banana pudding

For most of us, holiday meals are really about the desserts. Here’s a great one, from my family to yours…

Ingredients

  • Nilla Wafers
  • 6 bananas
  • 5 eggs
  • 1/2 tsp vanilla
  • 3 cups milk
  • 1 cup sugar
  • 3 Tbsp self rising flour
  • pinch of salt

Instructions

Line a 10” baking dish with the Nilla Wafers and then bananas. I like to line even the sides of the dish with the cookies.

Separate eggs and put egg whites aside in a small bowl. Combine dry ingredients and separately combine the milk and the yokes.

Place the milk mixture over a double boiler. Stir frequently until thickens but do not boil mixture. This should “cook” for about 20 to 30 minutes.

It will thicken substantially. Once the mixture has thickened, pour half of the mixture over cookies and bananas.

Layer cookies and bananas on top of this and pour the rest of the mixture on top.

Then beat the egg whites (and a little sugar) until thick and foamy. Top the cookies, bananas, and pudding with the thickened egg whites.

Put in oven at 375 degrees until top is golden brown (5 to 10 minutes).
