In a pinch? You can make an entire Thanksgiving using SPAM. Yes, you can! From a can!

Our intrepid photographer, Heaton Johnson, tends to get creative when it comes to Thanksgiving. This year, he put his head together with some folks to come up with a fall feast that features Spam all over the place.

Bloody Mary with Spam and Cheese

Recipe by Nastasja Martel

Mix Bloody Mary mix with two shots of vodka.
To the straw, attach a slice of Spam, pickle, colby jack cheese, and a Spam croissant.

Spam-Stuffed Mushrooms

Serves: 5-7

Ingredients

  • ~25-35 large whole mushrooms. White mushrooms are easiest to find large and whole. Serving size is 4-6 mushrooms per person.
  • 2 cups unseasoned breadcrumbs
  • If not using spam, 1/2 teaspoon salt. If using spam, no salt needed.
  • 3/4 teaspoon fine ground black pepper
  • 1.5 teaspoon garlic powder
  • 5-6 cloves garlic, minced
  • 4-5 Tablespoons dry parsley or equivalent fresh
  • 2 Tablespoons canola or sunflower oil
  • 1/2 cup water
  • 3-6 ounces spam (1/4 to 1/2 standard container), finely chopped

Method

  • Preheat oven to 350.
  • In a bowl mix breadcrumbs, salt, pepper, garlic powder, garlic, parsley, spam.
  • Gently remove stems from mushrooms. Be careful not to break either the mushroom or stem. Save stems.
  • Wash mushrooms.
  • Put mushrooms and stems in a baking pan covered with aluminum foil.
  • Fill each mushroom with breadcrumb mixture. Don’t compress/pat down breadcrumb mixture.
  • Drizzle canola oil over mushrooms and stems liberally.
  • Fill pan with water. In combination with excess oil, and depending on the size of the pan, liquid should cover the base of the pan.
  • Place in oven about halfway from the top. Too close to the top will overcook breadcrumbs, too close to the bottom will undercook breadcrumbs.
  • Set to bake, 30-40 minutes, until mushrooms are cooked through and breadcrumbs are browning.
  • Optional: when done, add liquid from bottom of pan to top of mushrooms.
  • Optional: when done, add a small piece of roasted red pepper to the top of all/some of the mushrooms.

Spam grillé aux poivrons rouges, de romarin et de vinaigre balsamique Spam sur un lit d’épinards

Ingredients

  • 1 roasted red pepper
  • Balsamic glaze (balsamic vinegar and brown sugar)
  • 1 grilled Spam filet
  • Large ground black pepper, to taste
  • Garlic powder, to taste
  • Spinach
  • Garnish of choice

Brussels Sprouts and Spam

Use Black Pepper Spam, chopped into cubes, and fried.
Fry one shallot with quartered Brussels sprouts, minced garlic, and more black pepper.

Rice a la Spam

  • Fry thin strips of Spam.
  • Make a well in the middle of a hill of cooked rice. Add egg to well.

Spamtato

Recipe by Heaton Johnson V

Ingredients:

  • 3 pounds Yukon gold potatoes
  • 2 teaspoons salt, divided
  • 1/3 cup butter
  • 1/3 cup whole milk
  • 4 ounces cream cheese, softened
  • 3/4 teaspoon coarsely ground pepper
  • 1 Tablespoon of pressed garlic
  • Spam

Method:

  • Peel the potatoes, and cut into 1-inch pieces.
  • Bring potatoes, 1 teaspoon of salt, and cold water, covered, to a boil in a large pot on medium-high heat.
  • Reduce heat to medium-low, and cook 16 to 20 minutes or until fork-tender; drain.
  • Add butter, the next three ingredients, and remaining teaspoon of salt.
  • Beat at medium speed with a large wooden spoon or stand mixer until potatoes have reached the desired degree of smoothness.
  • Slice Spam into small cubes, fry until golden. Fold into potatoes.

Chocolate Spam Cupcake Toppers

Virginia Fields

Use your favorite chocolate cupcake recipe, and top with these guys. For real.

Ingredients

  • 1/2 cup Spam, sliced thinly
  • 3 Tbsp brown sugar

Method

  • Preheat oven to 350.
  • Heat a skillet on medium until hot, add Spam and brown sugar. When sugar begins to melt, stir to fully cover Spam.
  • Pour onto baking sheet and bake for 30 minutes. Bring to room temperature and cut into small pieces.
