The accompanying elements change seasonally, and the meat and style of sausage may differ from one night to the next. The result is a variety of flavors with consistently high execution, as evidenced by this wild boar chorizo. Crispy shallot rings, micro greens, and tomato jam share a plate with hearty, smokey sausage for a tasty dish that belies its “small plate” classification.
