  • Spring succotash — With sour corn, confit tomato, last years butter beans, fiddlehead, fried chantarelle, herb pistou
  • Meatloaf — With mashed potatoes, mushroom gravy, Brussels sprouts
  • Pan-roasted trout — With latkes, apple butter, trout roe, buttermilk crème fraiche
