  • Slow roasted goat — With masa cake, chili puree, cilantro vinaigrette, scallion, and radish
  • Roasted fish — With chimichurri, pineapple pico, and Serrano Ham crumb
  • Pig head tamale — With butternut squash mole, queso fresco crema, spiced pecans, and pickled chilis (g)
