Brie with Herbs in a Baguette

Ingredients

  • 3 TBS dry white wine
  • 2 fresh garlic cloves, mashed
  • 1 tsp ground pepper
  • 1/4 c. extra virgin olive oil
  • 1 French baguette
  • 1/4 c. fresh thyme, stemmed
  • 1 c. coarsely chopped fresh basil leaves
  • 3 TBS finely chopped fresh chives
  • 16 oz. Brie cheese, rind removed

To prepare

Combine the wine, garlic and pepper in a bowl and mix well. Whisk in the olive oil until blended. Let stand for 30 minutes to several hours. Cut the baguette in half lengthwise. Combine the thyme, basil and chives in a small bowl. Cut the Brie into 1/8” slices. Drizzle the cut sides of the baguette with the olive oil mixture. Sprinkle half the herb mixture over 1 of the prepared baguette halves. Top with the Brie and sprinkle with the remaining herb mixture. Top with the remaining baguette half. Wrap tightly with plastic wrap and foil. Place between 2 baking sheets and top with a heavy weight. Chill for 5-8 hours. To serve, remove the foil and plastic wrap and cut into 1” slices. Makes 16 slices.
