But it might be the Yankee in me that smiles so broadly at the sight of apple pie with melted cheddar on top. Tasty pie isn’t just Northern, though, and the apple pie ($4) from WPA Bakery is as good as it gets. The sweet crumb topping and tender filling are models of the form, and the crust! Baked in straight-sided pans, the buttery crust is always a little thicker at the corner; my favorite part.
