- Pan-seared Scottish salmon filet with a cream of leeks and toasted pancetta over a parsnip puree
- Slow-roasted pork ossobuco served over mascarpone cheese stone grits and a Virginia apple compote
- Spanikopita filled with roasted peppers, portabella mushroom, onions, spinach, zucchini and fontina cheese, drizzled with a basil, sundried tomato and olive pesto served over an autumn root vegetable stew
